I’m on a mission to find the best gluten free / sugar free and healthy pancakes. This is test number one base on the recipe for banana bread oat pancakes from almonds&avocados

Definitely good, but very oaty, which makes sense as they are oat pancakes.

Ingredients:
1 cup oat flour ( edit: for those who cannot eat gluten, use certified gluten free oats)
1 tsp. baking powder
¼ tsp. sea salt
1 tsp. cinnamon
2 small bananas or 1½ large
½ cup almond milk
2 tsp. ground flaxseed
2 tsp. maple syrup
1 tsp. vanilla extract.
Directions:
  1. Heat a small amount of oil in a large non-stick pan.
  2. In a large mixing bowl, combine all of the dry ingredients except flaxseed.
  3. In a blender or food processor, combine the rest of the ingredients.
  4. Pour the wet ingredients into the dry and mix well.
  5. Pour the batter into the pan to form pancakes. When some bubbles have formed and the batter begins to brown on the edges, flip and cook until the bottom has browned.
