Raw Vegan Herb “Cheese” Spread

It’s kind of like cream cheese, but not exactly the same like the raw sour cream I make. It is definitely delicious in it’s own way! My brother likes it best on crackers.


Ingredients:

1/2 cup cashews soaked from 3 hours and drained

1/3 cup water

1 tablespoon coconut oil melted

1 tablespoon parsley

1 tablespoon chives

1 garlic clove peeled

Juice of 1/2 lemon

1/2 teaspoon raw apple cider vinegar

1/2 teaspoon salt

Directions:

Blend cashews, water, lemon juice and vinegar until smooth. (The recipe calls for a high-speed blender, but my regular blender worked just fine. Just blend for longer time)

Add coconut oil and blend.

Add herbs and salt and pulse slightly.

Refrigerate for a couple hours until it is set.
